Vanilla chia pudding – an easy and delicious snack that be made in a matter of minutes
Chia seeds are amazing; as well as being a nutritional powerhouse, they are extremely versatile and can be used to make one of my favourite snacks, chia pudding. This simple sweet treat can be put together in minutes and its creamy custard like consistency will fuel for you for hours thanks to the chia seeds high levels of protein, omega 3 and fibre. To make the base of any chia pudding all you need to do is combine the chia seeds with a plant-based milk of your choice, it really couldn’t be easier.
To make the perfect pudding I love to add in a couple of extra ingredients, such as fruit puree (I’ve used mango, banana and cacoa nibs in this particular one) or spices as these are a great way create a delicious pud.

Vanilla Chia Pudding
A quick, easy and healthy breakfast or snack. Great for making ahead of time and taking on the go!
- 3 tbsp. of chia seeds
- 3/4 cup of plant based milk
- 1/2 ripe banana
- 1 tsp. vanilla essence
Blend the banana, milk and vanilla essence together, you can do this by hand or use a blender for a smoother consistency
Stir in the chia seeds and pour into a bowl or glass of your choice
Leave it to set and refrigerate overnight
Once it has thickened and the chia seeds have gelled, serve with toppings of your choice
