With pomegranate in season right now, what better way to eat them than in a delicious, vibrant smoothie bowl? I love smoothies for breakfast, especially in the summer, but throughout the winter months I find it hard to eat as much fruit as I’d like without fresh berries and summer fruits on offer. But this pomegranate smoothie has made it easier to up my fruit intake and brightens up the moodiest of mornings – I mean just look at that colour, it’s almost too pretty to eat.
Unlike most smoothies this one does not require bananas. Instead I’ve used vegan strained yoghurt and oats to thicken it, which worked like a treat. Not only has it created a super-thick and creamy texture, it has the perfect consistency for your toppings, meaning you can pile ‘em high without the worry of them sinking. You’ll be smoothie-ing like a pro with this recipe!

Free from Bananas

Best eaten with a spoon
& So good you’ll want to eat it every morning

- 1 cup frozen berries
- 3/4 cup fresh pomegranate juice
- 3/4 cup vegan strained yoghurt
- 1/2 cup oats
- 1-2 tbsp. agave syrup
- A squeeze of lemon juice
- 1 tbsp. flaxseed (optional)
- Toasted coconut
- Pomegranate seeds
Simply place all of the ingredients into a blender and blend until smooth.
Pour into two small bowls (or one large)
Top with toasted coconut, pomegranate seeds and granola, or toppings of your choice
