A healthy, wholesome soup that’s packed full of green goodness – because sometimes that’s all you need to get you glowing from the inside out.
I have to admit that eating my greens isn’t something that has always come naturally to me. I shied away from them growing up but I’ve learnt to love them and nowadays I am always looking for different ways to pack them into my daily diet, which led me to this green goodness soup.
As you may have guessed from the title this soup is full of the good stuff. It’s pretty amazing actually. Packed full of broccoli, kale, spinach and peas this soup has ALL the greens – and it tastes good too.
As the greens don’t take long to cook you can have this soup ready in less than 30 minutes. All you need to do is create the stock, add in the beautiful green veggies and as soon as they’re cooked, blend and serve. It’s as easy as that – just be careful not to overcook the greens if you want the soup to retain its gorgeous colour, and goodness.
So if you’re looking for a something nutritious and delicious this soup is for you. You can have it as a light dinner, take leftovers for lunch the next day or pop it in the freezer for when you need a 5-minute meal.

This Green Goodness Soup is:

- 1 onion, chopped
- 2 leeks, chopped
- 2 cloves garlic, crushed
- 100 g spinach
- 100 g kale
- 100 broccoli
- 1 cup frozen peas
- 1 ½ litre of vegetable stock
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley
- Vegan creme fraiche
Add the onion to a large pan with a little water and cook for 5 minutes, or until translucent. Add in the leeks and garlic and cook until soft.
Pour in the stock and bring to the boil. Once boiling add in the greens and remove from the heat once they are cooked through.
Once removed from the heat add in the lemon juice and season to taste.
Blend (using a hand blender) and serve with vegan cream fraishe and a handful of parsley for added goodness.
