Mint chocolate ice cream made with a handful of healthy ingredients.
Mint chocolate is a classic flavour that we learned to love as kids through its bright green colouring however this healthy twist on the original not only looks gorgeous but is pretty damn good for you too. Would you believe it contains 3 of your 5 a day? I doubt it, but it’s true.
It’s sweet, refreshing and you’ll love every mouthful. Don’t be put of by the spinach, you cannot taste it. It’s just there to give the ice cream it’s colour, so the nutrients are an added bonus! As for the avocado it helps create an insanely creamy texture. Try it and you’ll see what I mean.
Eat this for breakfast, dessert or put in a cone and take it to the park.
This Mint Chocolate Ice Cream is:
Made from bananas
& Naturally green (thanks to the spinach!)
- 6 ripe bananas
- 1 cup baby spinach
- 1/2 small avocado
- A handful fresh mint / or 1-2 drops peppermint extract
- dark chocolate chunks
- chocolate sauce
Start by peeling your ripe bananas and cut them into chunks.
Put the bananas into a freezer bag and leave to freeze for 6 hours or ideally overnight.
Blend the frozen banana pieces with the spinach, avocado and mint in a food processor for several minutes (this may vary depending on the type of food processor you have) until it has gone from looking like blended banana to smooth, soft serve ice cream.
Drizzle over the chocolate sauce and if you want to, use a cocktail stick to create a pattern on top.
