Bircher muesli has become one of my favourite autumnal breakfasts; it’s filling, healthy and requires minimal effort – on the days when I’m not making pancakes or waffles, quick and easy breakfasts are my cup of tea. The night before I place the ingredients into a jug or bowl, whichever I have to hand and leave them to soak overnight. This creates a thick, creamy texture which is what makes the bircher taste so amazing. While this dish is served cool I like to top it with warmed seasonal fruits such as blackberries and apple for a touch of extra comfort on the cooler mornings. Although recommended, this is not at all necessary and can be served straight from the fridge with toppings of your choice. Simple.
This Bircher Muesli is:
- 1 cup of oats
- 1/2 cup of apple juice
- 1/2 cup of plain soy yoghurt
- 1 tsp of cinnamon optional<br><br>
- Topping suggestions<br><br>
- 1 grated apple
- 1/2 cup of warmed blackberries
- A handful of crushed hazelnuts
Place the oats, apple juice, yoghurt and cinnamon into a bowl or jug of your choice
Leave to soak overnight.
In the morning, serve with the suggested toppings or toppings of your choice.
