Is there anything better than freshly baked chocolate chip cookies? I don’t think so. But when you eat a vegan and gluten-free diet it’s often difficult to find cookies that taste like the original without containing refined sugars, a long list of ingredients or a hefty price tag.
Sometimes it’s just as easy to bake your own and I have to say these are perfect. They are crunchy on the outside but as you bite into them they’re soft and gooey in the middle – and are even better when the chocolate is still warm. They really do taste incredible plus they are made with healthy fats and protein which will help to keep you feeling satisfied, y’know if eating a cookie itself wasn’t satisfying enough!
These Baked Chocolate Chip Cookies are:

& Oh So Moreish
The BEST freshly baked chocolate chip cookies that are vegan and gluten-free
- 1 cup almonds
- 1 cup oats
- 1/2 cup coconut sugar
- 1/4 cup almond milk or dairy-free milk of your choice
- 100 g good quality dark chocolate chopped into chunks
Preheat the oven to 180c.
Place the almonds and oatmeal into a food processor and process until it resembles a fine flour.
Add in the rest of the ingredients and process further until a sticky dough has formed.
Stir in the dark chocolate chunks. Line a baking tray and scoop 1/4 cup of the dough onto the tray.
Using your hands, pat the dough down until a circle shape has formed and repeat this process until all the dough has been used.
Bake in the oven for approx. 10 minutes or until the cookies have turned golden brown. Allow to cool and enjoy.
