Creamy chia overnight oats with blood orange syrup, a simple creamy breakfast full of flavour.
I’ve posted several overnight oats recipes in the past (red velvet and apple beetroot flavour) and have said how great they are for busy mornings; all you have to do is prepare the ingredients the night before, place them in the fridge and you’ll have breakfast ready and waiting in the morning.
This time around I’m sharing a simpler recipe, one that doesn’t contain brownies or cooked beetroot, but one that’s super creamy and made with chia and blood orange syrup. A splash of this syrup really lifts the breakfast and gives it a nice bit of zest. If you love citrus fruits you need to try it.
Along with the oats and oat milk, an already creamy combination, the addition of Alpros almond yoghurt makes it even creamier. I love using almond flavoured yoghurt in this as there’s a subtle nuttiness that pairs well with the blood orange. You can of course use a dairy-free yoghurt of your choice.
These Creamy Chia Overnight Oats are:
Creamy Chia Overnight Oats
- ¾ cup of oats
- ½ cup of almond yoghurt I used Alpro
- ¾ cup of oat milk I used Alpro
- 1 ½ tbsp. chia seeds
- 1 tsp. vanilla bean paste<br><br>
- Blood Orange Syrup<br><br>
- 1 cup of blood orange juice 4 blood oranges, juiced
- ½ cup coconut sugar<br><br>
- Optional Toppings<br><br>
- 1 blood orange
- A few squares of dark chocolate
Put all of the ingredients into a bowl and stir well, making sure that the chia seeds are evenly spread
Place in the fridge and leave overnight
In the morning remove from the fridge and top with a little syrup, fresh blood orange and a few squares of dark chocolate<br><br>
Blood Orange Syrup<br><br>
Put the orange juice and coconut sugar into a small pan and bring to the boil for a couple of minutes until all of the sugar has dissolved
Remove from the heat and allow to cool
Transfer to a jar and leave in the fridge for up to 5 days.
