Easy vegan bounty bites that taste just like the real thing
Bounty bars were always the last chocolate to be eaten in our house and I’m not entirely sure why. Sweet creamy coconut coated in chocolate, what’s not to love?
I was having a tidy in the kitchen the other day when I came across a lot of desiccated coconut.
Confession: When I’m out shopping and can’t remember if I have something or not I pick up another packet anyway thinking ‘I’m bound to use this at some point’ and then usually end up with multiple packets that get pushed to the back of the shelve.
Does this happen to anyone else? Or is it just me? It’s something I’m working as 1) it’ll save me money and 2) it drives my boyfriend maaaaaad.
As you might have guessed the above happened with the coconut so I decided to put it to good use and make a vegan version of the bounty, or in this case bounty bites.
It was an on the spot decision but I have to say these bounty bites turned out really well, so well that I’ve had requests to make more and they taste just like the real thing. Perfect for getting a little chocolate fix without a whole lot of effort.
These Easy Vegan Bounty Bites are:
- 1 ½ cup desiccated coconut
- 3 tbsp. maple syrup
- 3 tbsp. coconut cream
- 2 tbsp. coconut butter
- 1 tsp. vanilla essence
- Pinch of salt
- 150g raw chocolate
- Place the desiccated coconut, maple syrup, and coconut butter, cream and vanilla essence into a bowl and combine until a sticky mixture forms.
- If the mixture is too dry, add some additional coconut cream alternatively if the mixture is too wet, add some additional coconut.
- Divide the mixture into 12 (1 tbsp. per ball) and roll into even sized balls. Put the balls onto a lined tray and place in the freezer to harden for 30-60 minutes.
- Melt the chocolate and pour it into a small bowl.
- Remove the coconut balls from the freezer and dip each one into the chocolate using a spoon. Make sure the ball is well coated and then place back onto the lined tray.
- Sprinkle a little coconut on top of each ball if desired.
