Celebrate the season with a super easy and delicious recipe for Spring pea and mint hummus
Pea and mint is a classic combination that goes so well in many dishes. Today I’m bringing you a recipe that marries the two together in a deliciously fresh hummus. Perfect as dip or in a sandwich, this is becoming one of my favourite recipes this Spring and will be perfect for picnics when the British weather picks up!
This hummus is incredibly light and refreshing. The mint really enhances the sweet pea flavour and adds a fresh minty touch. It literally smells like Spring. Instead of oil, I have used a couple of spoons of Alpros new Go On yoghurt (a dairy-free yoghurt that’s thick and smooth) a healthy alternative that works wonderfully as a replacement and creates the creamiest consistency. If you’re not avoiding oil, feel free to drizzle a little over the top.
Packed full of protein, and one of your five a day, this vibrant green hummus really is a must try.
This Pea and Mint Hummus is:
Easy to throw together
- 160g / 1 cup frozen peas
- 400g chickpeas, drained
- 1 clove of garlic
- 3 tbsp. Alpro Go On Yoghurt
- 6 large mint leaves
- Half a lemon, juice
- Pinch of salt
- Black pepper, to taste
- Put the peas into a strainer and run warm water over them for a minute to allow them to thaw.
- Once the peas have thawed place all of the ingredients into a food processor and processor for minute or two. If you prefer a smoother texture, leave it for a little longer until you have the desired consistency.
