Apple Beetroot Overnight Oats make for a healthy and delicious winter breakfast, made with crisp apples and earthy beets for a from the farmers market
I have made it my mission this year to eat more seasonally, it’s something I’ve always liked the idea of and have previously been better at doing but somewhere along the way I got stuck in the routine of eating the same thing over and over again, instead of trying something I am less familiar with. This leads me to these apple beetroot overnight oats.
I’ve been playing around with winter produce over the last few weeks and although I absolutely loved these roasted pears, apple and beetroot have won me over in this dish. The sweetness from the apple balances out the earthiness from the beetroot to create a healthy, delicious start to the day.
These overnight oats make for a refreshing change to porridge and are great for mornings when you simply don’t have time to stand over the stove. They also consist of 3 of your 5 a day – apple, beetroot and frozen raspberries – meaning you can pack in some fruit and veggie goodness before the day has even begun.
I love stopping by the farmers market and picking up fresh produce for the week, it’s a great way see what’s in season and support your local community. If you aren’t able to make it to one simply head to your nearest supermarket for the ingredients instead.
These Apple Beetroot Overnight Oats are:
Easy to prepare
& Full of goodness
- ¾ cup of oats
- ½ cup of plain soy yoghurt (I used Alpro)
- 1 medium apple (I used Pink Lady)
- 1 small beetroot, boiled
- ½ cup frozen raspberries
- 2 tbsp. date syrup
- Frozen Raspberries
- Chia Seeds
- Blend the beetroot and raspberries together with the date syrup until smooth
- Pour into a jug along with the oats and soy yoghurt
- Place in the fridge and leave overnight
- In the morning grate the apple and stir into the oats
- Serve in a bowl and top with more raspberries, chia seeds and pistachios
