If you love tea and finding ways to boost your health then these matcha pistachio ice-lollies will be right up your street. Green Leaf Matcha sent me over some of their gorgeous matcha to try and seeing as we’re in the mid of summer I thought some frozen matcha treats would go down well.
Green Leaf Matcha are a small start up dedicated to selling the best quality premium matcha tea. The owners explained to me that after trying various types of matcha tea, the quality differed significantly and that they chose to sell the organic super premium quality matcha tea from Uji, Kyoto in Japan because subtle nuances set it apart from others, making it the best premium quality.
Matcha can be used for cooking, baking or in drinks however to retain it’s quality it’s recommended to be added to water between 70-85c. While I may find it a little too bitter this way, one thing I love about Green Leaf Matcha is its amazing colour and the array of health benefits that come with it.

Matcha Ice Pops
These ice pops are made from creamy coconut milk, which helps balance out the bitterness of matcha, leaving you with a delicious delicate flavour. They’re perfectly refreshing on a hot day and combine my love for matcha and ice pops.
- 2 tsp. Green Leaf Matcha
- 1 can of full fat coconut milk
- 1 tsp. vanilla bean paste
- ¼ cup of liquid sweetener
- 40g crushed pistachios
- 50g melted dark chocolate
- Combine the ice lolly ingredients well, ensuring there is no lumps
- Pour into your ice lolly moulds
- Place in the freezer to firm up for 1 hour
- Remove from the freezer and add in the wooden sticks
- Return to the freezer for 5-6 hours until completely firm
- Remove from the mould and if decorating, drizzle the ice pops with dark chocolate and a sprinkling of pistachio
Where to Buy Matcha and What to Look For
For best quality matcha, make sure it is:
- 100% Matcha green tea leaves
- Bright green (a muddy green indicates that’s it of low quality or has been heavily processed)
- Stored in a foiled packet or tin
