It’s summer in the UK and we’re beginning to see the warmer days greet us as we step into July. We’re waking up with the sun and to the sound of birds singing but what are we eating to break the fast? Smoothie bowls, chia pudding, granola and bircher muesli tend to be favourites this time of year where as winter warmers like porridge take a back seat. I haven’t been eating it as much lately, but a bowl I made recently has certainly made me want to eat more of it and experiment with other summery flavours. The raspberry and cranberry combo in this recipe have totally transformed this porridge into a summer sensation. For sweet, creamy deliciousness, go ahead and try it for yourself. It’s bursting with antioxidants, vitamins and fibre as well as being rich in anti-aging properties’ that are perfect for maintaining healthy skin.

- 1 cup of oatmeal
- 1 ½ cup of rice milk
- ½ cup of frozen raspberries
- 2 tsp. arctic berries cranberry powder
- 1 tbsp. coconut cream
- Put the oatmeal, milk and raspberries into a small saucepan and place over the stove on a medium heat
- Once the oatmeal has thickened, stir in the cranberry powder and coconut cream
- Pour into a bowl and serve with toppings of your choice
